Spinach Bites

Directions:

PREHEAT oven to 200°C. Line Baking tray with BacoFoil Non-Stick with non-stick (dull) side toward food. Thaw pastry sheets at room temperature 20 minutes before unfolding.

COMBINE spinach, Swiss cheese, onion, cottage cheese, bread crumbs, 2 eggs, salt and nutmeg. On lightly floured surface, unfold each pastry sheet and roll out into a 12-inch square. Cut each sheet into sixteen 3-inch squares.

PLACE 1 teaspoon spinach mixture in centre of each square. Beat together remaining egg with water. Brush 2 edges of each square with egg mixture. Fold squares in half to form triangles. Press edges together with a fork. Place filled triangles on foil-lined baking trays; brush with egg mixture. (Spinach Bites can be frozen at this point).

BAKE 12 to 14 minutes or until golden brown and puffed.

BACO KITCHENS TIP To freeze, place a sheet of BacoFoil Non-Stick over each cookie sheet of unbaked Spinach Bites. To seal packets, fold edges of bottom foil sheet and top foil sheet together. Place baking trays with packets in freezer. When frozen, remove baking trays from freezer and stack packets in flat layers in the freezer. To bake, preheat oven to 200°C. Return frozen foil packets to baking trays, remove top sheet of foil and bake 18 to 20 minutes or until golden brown.

  • 10oz/250g chopped spinach, cooked and drained
  • 4oz/110g shredded Swiss cheese
  • 4oz/110g chopped onion
  • 2oz/50g Low fat cottage cheese
  • 2oz/50g fine dry bread crumbs
  • 3 Eggs, divided
  • 2 Pinches of salt
  • 1 Pinch of ground nutmeg
  • 1 teaspoon water
