“When roasting that Sunday joint, place the meat on a rack and into a roasting tin. Take one large mug of cold water and tip into tin, cover with Bacofoil and roast. This will keep the meat moist, the last 20-25 mins of cooking time remove the foil to crisp colour meat.”
